This Stern Tanning Co. calfskin head is mounted with the flesh side on top.  That is opposite of my normal method for Stern hides (grain side up).  The flesh side has a little more texture compared to the grain.
 
The flesh side might tend to soil a little more quickly than the grain.  (FYI:  I often mount stained heads that was intemntionally because the flesh side sometimes absorbs more color).

It is a very nice hide with a good bit of mottling. It should sound and perform very well!
